Something about JUYONDAI GINSEN GINJO SAKE
This sake is made from the King of Sakamai,Yamadanishiki, It has a a mild fruity nose (for a juyondai), and a sweet rice flavour. Polished to 50%, it can technically be called a Daiginjo, but the brewery decided to just call it a Ginjo Sake.
And since this is from Juyondai, the water used in brewing comes from a spring that is 25 meters below the ground. Tap water or using pipes are not Juyondai’s thing, all water used in the manufacturing comes directly from the spring.
